Khao Chae at Sindhorn Kempinski

A Refined Taste of Thai Summer

Celebrate the elegance of Thai summer cuisine with the seasonal Khao Chae set at Sindhorn Kempinski Hotel Bangkok. Served at Flourish restaurant, this limited-time menu invites guests to rediscover one of Thailand’s most cherished warm-season dishes, thoughtfully curated by Executive Sous Chef Chatsorn Pratoomma and the culinary team.

Traditionally associated with Thailand’s hottest months, Khao Chae is a refreshing dish that has evolved through centuries of royal culinary heritage. Once prepared exclusively for the royal court, this delicately balanced meal has become a beloved seasonal tradition enjoyed across the country. At Sindhorn Kempinski, the presentation retains the graceful sophistication of its royal origins while staying true to authentic Thai recipes and flavours.

At the heart of the set is fragrant jasmine rice prepared as khao ob tien, a traditional method in which the rice is gently smoked with a scented candle before being served in chilled aromatic water. This careful preparation creates subtle floral layers and an elegant fragrance that defines the dish. The cool rice offers a refreshing contrast to Thailand’s tropical heat, making it one of the most distinctive summer dishes in Thai cuisine.

The Khao Chae set at Flourish restaurant is complemented by an array of classic side dishes, each crafted to balance flavour, texture, and aroma. Every element plays an essential role in the experience, allowing diners to enjoy both savoury depth and delicate sweetness with each bite.

Guests can enjoy Kapi Balls, deep-fried bite-sized shrimp paste balls that offer a rich umami flavour and a satisfying crispy texture. Another traditional favourite is Stuffed Shallots, where whole shallots are filled with caramelised fish before being lightly fried to create a fragrant, savoury bite.

The menu also features Stuffed Banana Chilli, a beautifully balanced dish where banana chilli is filled with minced pork and shrimp and wrapped in fluffy egg. The mild heat of the chilli enhances the sweetness of the filling while maintaining a refined, delicate taste.

Adding further complexity to the meal is Caramelised Dried Turnip, a classic Thai accompaniment made by stir-frying pickled turnip with palm sugar until it develops a slightly sweet and savoury depth. Diners can also enjoy Shredded Pork or Beef, gently caramelised to create a rich flavour that pairs perfectly with the chilled rice.

To introduce freshness and brightness, the set includes Yum Mamuang Goong Sieab, a vibrant green mango salad topped with crispy shrimp. The dish brings together tangy, sweet, and savoury notes, adding a refreshing contrast to the richer accompaniments.

Completing the experience is a selection of assorted seasonal vegetables, including rhizome root, green mango, spring onion, and cucumber. These crisp vegetables provide a clean and refreshing finish, helping to balance the overall meal and highlight the aromatic rice.

Together, these carefully prepared dishes create a harmonious culinary journey that reflects the heritage and sophistication of Thai cuisine. The Khao Chae set captures the essence of a timeless summer tradition while presenting it with the refined touch expected from a luxury dining destination like Sindhorn Kempinski.
