A vibrant Michelin-starred dining experience inspired by Thai summer flavors

IGNIV Bangkok, the 1-Michelin-starred restaurant located at The St. Regis Bangkok, welcomes the summer season with the launch of its new seasonal sharing menu, available from May 27 to August 31, 2026. Inspired by the bright and refreshing flavors that define Thai cuisine during the hottest time of year, the new Summer Menu celebrates acidity, freshness, and bold contrasts through a curated 19-dish culinary journey.

Designed around IGNIV Bangkok’s signature sharing concept, the new menu highlights Thailand’s love for vibrant flavors, especially the balance of sourness, sweetness, and spice found in many traditional dishes. Seasonal Thai ingredients including fermented Thai plum, tamarind, kaffir lime, Thai olive, green papaya, and watermelon seeds are thoughtfully incorporated to create a playful yet refined dining experience.
One of the standout dishes this season is Cornetto–Mango–Tamarind, where ripe Thai mango is paired with the rich tanginess of tamarind and served inside a crisp cornetto shell, delivering a refreshing balance of sweetness and acidity with contrasting textures.

Another highlight, Scallop–Watermelon Seeds–Pomelo, reinterprets the nutty component often found in traditional recipes by replacing nuts with watermelon seeds, inspired by one of Thailand’s most iconic summer fruits. The result is a lighter, fresher dish layered with citrusy pomelo and delicate scallop flavors.
Seafood lovers can also expect bold flavors from Trout–Fermented Thai Plum–Chili, featuring a fermented Thai pickled plum sauce that offers intense sour notes softened by a subtle lingering sweetness and gentle heat from chili.

For a dish that bridges European and Thai culinary traditions, Swiss Larb–Waxy Egg–Thai Olive combines classic Swiss beef tartare with Northern Thai influences, incorporating toasted rice, savory Thai olives, and a rich waxy egg yolk for a velvety finish.
To conclude the experience, guests are invited to IGNIV Bangkok’s signature Candy Store, where they can personally select handcrafted sweets to enjoy alongside tea or coffee or take home as a memorable ending to the meal.
The IGNIV Bangkok Summer Menu is available in several dining formats to suit different occasions and lifestyles.

The Full-Tasting Menu features a complete 19-dish sharing experience priced at THB 5,500++ per person and is available daily for dinner from 6:00 PM to 11:00 PM, as well as weekday lunch service from 12:00 PM to 3:00 PM. Guests can further elevate the experience with optional wine pairings, including a 4-glass signature wine pairing at THB 4,500++ or a 3-glass pairing at THB 3,500++.
For guests looking for a shorter midday experience, the Lunch Break Experience offers a curated 12-dish selection from the full menu at THB 3,200++ per person, available Monday to Friday between 12:00 PM and 3:00 PM. An additional 3-glass lunch wine pairing is available for THB 2,500++.
Weekend diners can also enjoy the Weekend Brunch, featuring a specially curated 12-dish sharing menu from the Summer collection, available every Saturday and Sunday from 11:00 AM to 3:00 PM at THB 3,200++ per person.

To accommodate a variety of dining preferences, IGNIV Bangkok also offers vegan, vegetarian, à la carte, and children’s menu options.
