At the heart of this new menu is a commitment to sustainability and locality. Over 90% of the ingredients are sourced directly from the neighboring provinces of Phetchaburi and Prachuap Khiri Khan, showcasing the rich agricultural and coastal bounty of the region. Inspired by a Minimal Waste Philosophy, each dish is thoughtfully crafted from root to leaf and peel to bone, transforming seasonal produce and fresh seafood into gourmet masterpieces.

The new dining experience is curated by Chef Gibb – Adtavorn Charoonponthiti, an acclaimed executive chef with a prestigious background in Michelin-starred kitchens across France. At Brezza, Chef Gibb channels his expertise into an elevated set menu, celebrating regional flavors through contemporary techniques and artistic presentation.

A wild-caught delicacy, banana prawns are complemented by tangy pickled turnip, carrot, and radish, served with a rich mussel emulsion and crispy prawn head. The finishing touch: a sweet-savory prawn head sauce with mango.
