MIA – Modern European cuisine with Asian Soul, Chefs “Top” Russell and Michelle Goh present a seasonal tasting menu that focuses on beautifully defined flavours and seasonally-driven cuisine as cornerstones of their new offering.
Spring Tasting Menu – Guests will enjoy a succulent seasonal tasting menu especially crafted by Chefs Top and Michelle and dine on a series of dishes featuring the finest in-season produce paired with carefully selected fine wines.
Chefs Top and Michelle present an eight-course tasting menu made with premium imported and locally sourced ingredients. Diners will start off with an all-time favourite Josephine Oyster with Champagne and Shiso Granita, mouthwatering Smoked Haddock Tart with Hollandaise and Three Cheese Cigar with Pancetta.
Other highlights include Hokkaido Scallop Crudo with Caviar and Pickled Kohlrabi for some zestiness. For the main, diners can choose between a superb centrepiece of Hay Aged Pigeon served with Red Endive and Figs or they can level up to premium succulent pieces of 48 hours Braised Beef Short Rib, paired with Oyster Cream and Salsify.
Guests will wrap up the night with Chef Michelle’s mouthwatering desserts, Whipped Feta with Tomato Jelly and Watermelon for a palette cleanserandfollowed by a dreamy dessert, Mia’s Cereal Bowl with Malted Milk Chocolate and Corn.
Diners can opt for a wine pairing experience of five glasses that have been perfectly curated to complement the dishes and grant diners a look and feel of Mia’s carefully selected wine cellar – composed of more than 115 labels of old and new age wines from all over the world.
