Inspired by memories of winters in Europe and Asia, Chefs “Top” Russell and Michelle Goh present the seasonal tasting menu that focuses on flavours and distinctly highlights them with slow-cooking, curing and fermentation techniques that develop a unique profoundness for each course.

Winter Tasting Menu
Mia’s new seasonal tasting menu is inspired by the vibrant colours and flavours of nature and chefs’ formal training in Michelin-starred restaurants in Europe and Asia. Sourcing the best available produce in Thailand and abroad, Top and Michelle fuse their passion for the culinary arts with a good-natured and creative approach. Dishes showcase the most alluring European flavours with an Asian edge and contrast the crips nights of the winter season in lavish surroundings.
Their seasonal seven-course tasting menu highlights a tasty realm of seafood luxury, Hokkaido Scallop served with Apple, Dill Sorbet and Yoghurt Dressing, an umami-rich Crab Chawanmushi with Crustacean Oil and Artichoke, and their famous crispy-on-the-outside, soft-on-the-inside homemade Sourdough Brioche with Shallot Butter and Onion Ash.

For the main, diners can choose between Pork 4 Ways, a dish that features several slow-cooked components, Winter Kale and Parsnip or they can level up to premium succulent pieces with a great amount of marbling of Hokkaido Kamui Gyu A4 Wagyu Chateaubriand, paired with Celeriac, Mushroom Emulsion and Pomme Soufflé.

Diners can opt for a wine pairing experience with either five or three glasses that have been perfectly curated to complement the dishes and grant diners a look and feel of Mia’s carefully selected wine cellar – composed of more than 115 labels of old and new age wines from all over the world
