Signature Bangkok proudly announces that it has retained its prestigious 1-MICHELIN Star for the fourth consecutive year, as revealed in the MICHELIN Guide Thailand 2026. The announcement was made during the official MICHELIN Guide Thailand 2026 Awards Ceremony held on 27 November 2025 at The Ritz-Carlton Bangkok.

This continued recognition reaffirms Signature Bangkok’s position as one of Bangkok’s leading fine dining destinations, celebrated for its consistently high standards, artistic expression, and distinctive French and floral cuisine. The MICHELIN Guide Thailand 2026 praised Signature Bangkok and Executive Chef Thierry Drapeau for delivering exceptional gastronomy in a refined setting overlooking Bangkok’s skyline.

Four Years of MICHELIN Excellence in Bangkok

Signature Bangkok first received its MICHELIN Star in 2021, less than a year after opening. Since then, the restaurant has successfully maintained its 1-MICHELIN Star every year, marking 2026 as its fourth consecutive year of recognition.

Chef Thierry Drapeau shared his appreciation upon receiving the award, expressing gratitude to his entire team. He noted that the achievement reflects a full year of discipline, creativity, passion, and teamwork, emphasizing the importance of consistency and collective effort in maintaining MICHELIN standards.

Located on the 11th floor of the five-star VIE Hotel Bangkok – MGallery Collection, Signature Bangkok offers an intimate fine dining experience with dinner service limited to just 20 guests per evening. The restaurant is conveniently located just 50 metres from BTS Ratchathewi, with parking available on site.

The Art of Storytelling Through French and Floral Cuisine

Signature Bangkok is known as a pioneer of modern French and floral gastronomy in Thailand. Chef Thierry Drapeau’s philosophy, described as a “cuisine of the soil,” focuses on lightness, clarity, and deep respect for ingredients. His menus make expressive use of fresh edible flowers and herbs, adding both flavour and emotional depth to each dish.

Seasonal tasting menus blend classic and contemporary French techniques, rooted in the stories of each ingredient. Chef Thierry works closely with local producers while maintaining strong connections to his native Vendée region in France. Every dish is designed as a journey of discovery, shared between the kitchen and the guest.

Chef Thierry’s culinary approach is shaped by a remarkable career that began in Nantes, France, and continued with the critically acclaimed restaurant Thierry Drapeau Logis de la Saint-Sulpice-le-Verdon in the Pays de la Loire, where he held two MICHELIN stars for nine consecutive years.

Signature Dishes Inspired by Heritage and Memory

One of Signature Bangkok’s most celebrated dishes, Canard de Callance, exemplifies Chef Thierry’s deep connection to Vendée. The duck is sourced from the renowned Maison Burgaud in Challans and prepared using a technique inspired by the chef’s grandmother, slowly simmered in butter to achieve a rich and aromatic flavour. The dish is paired with mogette beans, a legume grown exclusively in Vendée, reinforcing the dish’s strong sense of place.

Family traditions continue throughout the menu. Bread served at Signature Bangkok is made using a levain starter based on Chef Thierry’s grandmother’s recipe, passed down through generations. Seafood such as langoustine and Atlantic fish is sourced from Laurent Daniel, a long-time fisherman and personal friend of the chef from Brittany.

Desserts also carry emotional resonance. Chef Thierry’s Riz au Lait is a refined interpretation of his mother’s classic French rice pudding, transforming childhood memories into a contemporary fine dining dessert.

A New Chapter for French Gastronomy in Thailand

While deeply rooted in French tradition, Signature Bangkok continues to evolve. Working alongside Chef Thierry is a talented culinary team that brings new perspectives and experiences to the kitchen. Thailand’s diverse ingredients and culinary culture play an increasingly important role in shaping the menu.

During a recent visit to Chiang Mai, Chef Thierry discovered a locally grown cherry tomato from Thailand’s “Rose of the North.” This ingredient has since become a signature starter, illustrating how French technique and Thai terroir come together on the plate. Subtle fusion elements reflect Bangkok’s dynamic food culture while preserving the integrity of French gastronomy.

Festive MICHELIN Menu Celebrating the Season

To celebrate its continued MICHELIN recognition, Signature Bangkok introduces a special Festive MICHELIN Menu during the holiday season. This celebratory menu showcases Chef Thierry’s favourite ingredients and signature dishes, including a fish course sourced from Les Sables-d’Olonne and caught by fisherman Laurent Daniel.

Available in both six- and eight-course formats, the Festive MICHELIN Menu highlights the restaurant’s commitment to storytelling, seasonality, and MICHELIN-level excellence.
