The St. Regis Bangkok has announced the appointment of Nina Sanda Win as its new Executive Pastry Chef, ushering in a new chapter for the hotel’s pastry program. A German-Burmese pastry chef classically trained in French techniques, Chef Nina is recognized for her clean and sophisticated flavour profiles. Her desserts focus on balance rather than excessive sweetness, often drawing inspiration from the savoury kitchen. By pairing unexpected ingredients—such as Thai basil with strawberry confit or caramel infused with miso—she creates layered desserts that are complex, harmonious, and memorable. Herbs, spices, and carefully selected ingredients play an essential role in her pastry philosophy, bringing depth and character to each creation.

With nearly a decade of experience in some of the world’s most prestigious kitchens, Chef Nina has built a strong reputation in luxury hospitality and fine dining pastry. She previously worked in one of Bangkok’s leading luxury hotels, where she developed a unique style that blends Thai ingredients with classical French pastry techniques.
Chef Nina refined her culinary foundations at Le Cordon Bleu Paris, one of the world’s most respected culinary institutions. She later gained international experience at the legendary Ritz Paris, a hotel distinguished with three MICHELIN Keys and known for its exceptional gastronomy and hospitality.


Her culinary journey continued in the renowned Alpine destination of Megève, France, where she worked in several acclaimed kitchens, including Restaurant Prima (1 MICHELIN Star), La Table de L’Alpaga (2 MICHELIN Stars), and Les Chalets du Mont d’Arbois, A Four Seasons Hotel. These experiences allowed her to refine her skills in Michelin-level kitchens while working alongside some of the most respected chefs in the culinary world.
During her career, Chef Nina has collaborated with renowned pastry chefs such as François Perret and Fabrice Daniel. She has also trained under Michelin-starred chefs including Anthony Bisquerra, Nicolas Hensinger, and Julien Gatillon, gaining invaluable insight into fine dining techniques and culinary innovation.
